Yes, we make these at least once a week in our household, usually Sunday morning breakfast. They are so easy to make and are so good!! I learned how to make these in like 8th grade home ec class and Riley loved when I made it for him when we were dating (might be one of the reasons he married me).
Ingredients:
1/2 Cup of Flour
1/2 Cup of Milk
2 Eggs
2 Tbsp of Sugar
1/4 Tsp of Salt
1/4 Tsp of Vanilla (Optional)
1-2 Tbsp of Butter
1) Preheat oven to 425 degrees.
2) In a medium bowl combine all ingredients EXCEPT butter. Beat with a whisk until smooth.
3) Place butter in a 9inch pie pan; melt in 425 degrees oven just until butter sizzles (2-4minutes).
4) Remove pan from oven; tilt to coat bottom with melted butter
5) Pour mixture into hot pie pan and then return pan to oven (butter should come up on the sides forming a thin circle around the mixture)
6) Bake at 425 degrees for 12-14 minutes or until puffed and golden brown. (some butter may rise to the surface of pancake during baking.
Topping suggestions:
strawberries, bananas, powdered sugar, syrup, cream cheese, ice cream, cinnamon apples, etc etc
